For me it doesnt sound very likely to get everbody play at a specific time.
Also there is no real need to play all matches simultaniously and no need for a hurry.
Imo it could work better to just give the fixtures and set a date and time when it has to finished, cant see it working only on one evening.

Just set the deadline when all fixtures should be finished.

ok so lets play every day one round and we start tomorrow. when both agree you can also play on the next day and then just play another match when you won.
Explanation: for example no time on tuesday, so play on wednesday first round (->you win ofc) and then play the quarter final match just after or something whatever.

Match Times
First Round - Tuesday 1st March
Quarter Finals - Wednesday 2nd March
Semi Finals - Thursday 3rd March
Final/3rd Place Match - Friday/Saturday/Sunday 4th to 6th March (last match so they can decide because weekends some have no time - maybe we can stream it )
